I noitce in my submitted reviews on my site that they randomly say (meta data) are these the ones that appear in google as snippets - and is there a way to control with ones are used as meta?

Hey Paul,
The meta data link on the Review List page usually just shows you extra data that was gathered when they submitted the review. It doesn't have anything to do with the reviews used in Google schema. Currently, there isn't a way to individually pick which reviews are used in schema. It will use all the reviews that you are showing in the review template. You can filter by type...
